We make our pizzas using Caputo Italian 00 flour, which is imported directly from Italy and known for its unique qualities, perfect for a truly Italian experience.

The Magic of Caputo Italian 00 Flour

Italian 00 flour is often considered the gold standard for pizza dough. What sets it apart is the fine grind, which gives the flour a baby powder-like texture, perfect for creating a dough that is both chewy and crisp without becoming dense or tough. Unlike American flours, which are typically categorized by protein content, Italian flours are graded based on how finely they are ground. The “00” label represents the finest grind, which ensures a smooth, easy-to-handle dough that cooks to perfection in our wood-fired oven.

While Caputo Italian 00 flour has a gluten content similar to all-purpose flour (around 11-13%), its unique milling process allows it to be more responsive in the kitchen. This means it yields a dough that is stretchy yet delicate, offering the perfect balance of chewiness and crispness in every bite. For those who are gluten aware, this flour is often better tolerated due to its refined nature and the way it’s processed.

Many of our guests who are sensitive to gluten, including those with celiac or gluten allergies, have enjoyed our pizza without experiencing any issues, and they’ve even returned multiple times for more. While we can’t label our pizza as gluten-free, we are proud to say that we are “gluten aware,” thanks to the use of our finely milled Caputo Italian 00 flour and the process we use to prepare our dough balls daily. Gluten aware guests have inquired to purchase our dough balls to use at home, however, we do not currently sell them for home use.
